How I know our world isn't a simulation

Modern AI advances made me think about where all this is heading. And it certainly looks like we will be able to simulate human experiences digitally at some point. If that is the case, how do we know if we are a simulation? Well, I decided to use my experience of programming digital worlds to tackle that question.
If we were to simulate a world, we would probably be training AI models based on either our reality or on a detailed simulation of it. Some would say that AI is like statistics - it produces an average, the most likely form of a concept. For example, we don't need to simulate molecules of a horse if, in the end, all we need is to activate part of the brain that says, "I saw a brown horse just now" to get the same experiential outcome.
But there will be a few problems with that world. As we have already seen problems with trained AI models that are "Good enough".

When we train on the average arrangement of molecules, we will learn that. And if scientists in that world were to look at individual particles, they would still see the average results, not a simulated particle. A single molecule would act as a spray of molecules. Also, when a simulation encounters an error, it is easier to restimulate parts of it. So, sooner or later, scientists will see that they can influence simulations retroactively, like changing the past on a tiny scale by simply forcing a particle to be more "consequential". I think at that point they will start to suspect something. That is how I know that our world is real: particles are particles, nothing I do now affects the past in any way, and also there is no simulation precision limit - there is no limit to how tiny things can get: molecules, atoms, electrons - you can zoom to infinity. Sure, programmers could program for those scenarios, but seeing where things go today, I think we will not bother, AI will do its best, and we'll call it good enough. Only for our simulated world to realize that they are not real and scream in panic. LOL
